Tortang Talong is a cheap and popular Filipino dish made from grilled eggplants that are dipped in beaten eggs and then fried until golden brown.
To prepare this dish, the eggplants are first grilled until the skin is charred and the flesh is soft. The skin is then peeled off, leaving the eggplant pulp intact. The pulp is then flattened using a fork and dipped in beaten eggs, and then fried until cooked.
