Sinigang, Bulalo still among best soups in the world – Taste Atlas

Sinigang and bulalo, two well-known Filipino dishes, fell this year in the rankings but still made the list of the world’s top soups.

According to Taste Atlas’ Top 50 Best Soups in the World List for 2023, sinigang and bulalo dropped to the 42nd and 43rd spots, respectively, scoring 4.4 out of 5 stars each. 

Sinigang’s ranking in 2023 is a huge drop from  its ranking in 2021, when the tamarind-based soup took the top spot in the international food database. In 2022, sinigang fell to the seventh position, while bulalo slipped to the 19th.

The number one spot for 2023 belongs to Japan’s tonkotsu ramen, a rich bone broth that packs a strong roasted umami flavor. Just like sinigang and bulalo, the Japanese dish can be enjoyed alone or with rice. 

Taste Atlas has described sinigang as a tamarind-based soup consisting of water spinach, hot peppers, cabbage, broccoli, eggplant, diced tomatoes, sliced onions, ginger, garlic, green beans, fish sauce, and salt. 

The main ingredient can be pork, fish, milkfish, shrimp, chicken, or beef. 

Sinigang is traditionally served piping hot as a main dish, with rice as its accompaniment. It’s an often seen dish at special occasions such as birthdays or weddings, and over time, as the dish became more popular, there were new variations that used guava or raw mango instead of sampalok, and each region developed their own version of the popular soup,” Taste Atlas said.

“With its sour lightness perfectly matching the harsh tropical heat of the country, sinigang is a unique soup that is a true representative of Filipino cuisine,” it added. 

Bulalo, on the other hand, is a delicious soup made from boiled beef shanks and bone marrow.

Its side ingredients include cabbage, string beans, onions, and corn, and it is best enjoyed in cold weather. 

“It can be found in most upscale restaurants in the Philippines, due to the fact that beef shank and bone marrow are not among the cheapest cuts of meat in the country,” Taste Atlas said. 

“It is believed that this simple, comforting, and flavorful soup is best when the meat is so tender that it falls off the bone,” it added.
