Tortang Talong is a cheap and popular Filipino dish made from grilled eggplants that are dipped in beaten eggs and then fried until golden brown. 

To prepare this dish, the eggplants are first grilled until the skin is charred and the flesh is soft. The skin is then peeled off, leaving the eggplant pulp intact. The pulp is then flattened using a fork and dipped in beaten eggs, and then fried until cooked.

It is usually served as a main dish and can be enjoyed with rice and a dipping sauce made of vinegar and soy sauce, or ketchup. 

Some variations of tortang talong may also include ground meat, onions, garlic, and other seasonings mixed with the beaten eggs before frying.

Bicol Express is a popular spicy Filipino dish that originated from the Bicol Region. 

The dish is made with pork belly, coconut milk, shrimp paste, chili peppers, garlic, onion, and sometimes with green vegetables such as long beans or spinach.

To prepare this, the pork belly is first sautéed with garlic and onions, then cooked with coconut milk, shrimp paste, and chili peppers until the sauce thickens and the pork is fully cooked. The dish is then served hot with rice.
